Recipe:
Black Truffle Risotto
Borgo de’ Medici Black Truffle Risotto pkg
4 C of chicken stock
4T Italian Butter, divided
1 small onion finely chopped
¼ of good white wine, that you can drink while or after you are cooking
¼ c freshly grated Parmiggiano Reggiano
Salt and Pepper to taste
- Warm chicken stock over low-med heat until it simmers
- In a heavy bottom saucepan add 2T butter and chopped onion on med-low heat until it is soft and translucent (about 3 mins)
- Add the rice packet and stir on medium heat until toasted (about 5 mins)
- Add ¼ C of white wine and reduce
- Begin to add the stock one ladle at a time, and stir until it is absorbed by rice
- Continue until the rice is tender and creamy about 15-20 mins
- Add the remaining 2T of butter and cheese, and season with salt and pepper
- Top with additional cheese and truffle oil if desired
