Recipe:

Black Truffle Risotto 

Borgo de’ Medici Black Truffle Risotto pkg  

4 C of chicken stock 

4T Italian Butter, divided

1 small onion finely chopped 

¼ of good white wine, that you can drink while or after you are cooking

¼ c freshly grated Parmiggiano Reggiano 

Salt and Pepper to taste 

  1. Warm chicken stock over low-med heat until it simmers
  2. In a heavy bottom saucepan add 2T butter and chopped onion on med-low heat until it is soft and translucent (about 3 mins)
  3. Add the rice packet and stir on medium heat until toasted (about 5 mins)
  4. Add ¼ C of white wine and reduce
  5. Begin to add the stock one ladle at a time, and stir until it is absorbed by rice 
  6. Continue until the rice is tender and creamy about 15-20 mins 
  7. Add the remaining 2T of butter and cheese, and season with salt and pepper 
  8. Top with additional cheese and truffle oil if desired
